In this episode from the "Fairs & Festivals of Louisiana" series of "A Taste of Louisiana" from November 2, 1996, Chef John Folse visits the Los Isleos Festival in St. Bernard Parish. In the kitchen, he cooks a traditional Caldo, Los Isleos Paella, and Boiled Pudding. He also prepares Mirliton Pudding with Debbie Carballo as they discuss the Los Isleos Culture in Louisiana and their participation in the Battle of New Orleans.
Description
Chef Folse visits the Los Islenos Festival in St. Bernard Parish, where he cooks caldo, a traditional soup, and Islenos paella. Islenos are the people who migrated from the Canary Islands. Isleno Deborah Carballo joins in the kitchen to prepare a mirliton pie and sample boiled pudding with creme Anglaise.
