So join us for an under cover. Simon food under rep. Next on yen can cook. Cook is made possible by killer and the creator of Tyco International cookware tailoring designs products for the home to complement a contemporary lifestyle. And quite the moment from salads to home Big Brother to brother. We've been a part of Good Cooking For general. Thank you and thank you my maker of Oriental sauces some 60 30
cucumbers. I am thank you thank you all in Asia. When we visit a relative or friend we always rev up some sweet of fruits and bring it to them as gifts. Today we're going to talk about food and the reps. But in a different sense. So I want to show you the first food the first dish on the Rep. I coated salmon with black bean sauce. I can call pink salmon would like his sauce enough for you.
OK. This particular dish is one of my favorite when I used to often. But before I do it I need some rep music to get excited. OK. I am really excited now. I am ready to rock and roll. This particular dish all you really need is some and this is approximate one to how Palin Malva Semon from the West Coast Washington a lot of weak salmon. All I have to do is cut it into big chunks. I'm going to cut into three or four chunks right here. Use a knife cut it up and one two three.
Sleep and then you put a back here right before you put it back here you want to make a Marilyn E. and I'm going to get ready some Mary so we can marinate is so this would taste marvelous. All I need is a tiny bit of soy sauce to T-Bills going to soy sauce. Put it right here and also I use approximately two tablespoon of dry sherry and also approximately one teaspoon of sesame seed oil. Also use a tiny bit of white pepper and cornstarch. OK. Then mix them all up. Marinate this anywhere from half an hour to two hours overnight. Depends on how much time you have put them all together. Make sure you turn them upside down upside down upside down inside turn a mob think present how much time you have you can do this 600 times and you set it aside. And then when this is ready you can get ready because you know why because I'm going to make a topping to put it on top of DS before I rep it up. OK.
In this particular topping we have some black bean This is let me show you. This is so to like bean. Also call for men to black bean The Chinese call. Now we see. OK. All you have to do is rinse it in water and used the back of a knife. This handle you kind of question a little bit to get the flavor. OK. This is how functional the knife is. After this you put over here two to three tablespoon of these black beans. You can buy this and you can store this. It can keep for approximately 12 months to 14 months to 24 months. And then also use a tiny bit of green onion and garlic and ginger. Look at all this wraps. We're going to get a tiny bit of garlic. Dutch garlic ginger. Well shine. And then green money in. OK put it all
together. You go one two three four five six seven eight nine ten eleven. All together. Put them all over here. All you have is also use approximately one teaspoon of sugar you can cut it down you don't have to use it at all. When this is nice and ready we set it aside. We'll show you how easy you can do it. Here you'll have some for oil. OK you can use foil. You can use anything it doesn't make any difference for oil would put a big piece of these seven. OK put it right here and then you can put some topping right on top. Put it right over here. Fish cooked this way. Assume the Jews and keep all the moisture and flavor inside. So taste very good. You use no oil so it's really nice. You rev it up like this or like this or like this. No problem at
all. It depends on your mood. OK rev it up and rode it rode it. So this will see you in the juice. OK look at this with your rabbit. There's nothing fishy about this. Everything is under wraps. Look at this. Whence is done. You don't know. Turn on your AV and preheat the oven to about 400 degree and bake it for about 12 to 14 up to 15 minutes. OK I will put it all together now. If you don't want to use for it you can use parchment paper. No problem at all. Now we're going to put it in the afan OK. And then in the meantime we see. We here have something done our head of time because we got a lot of people running it. Special guests and the problem I have is when you break it they change the shapes.
While this is hot. Marvelous. Let us see what happens if you have time you can also put a tiny hybrid of Julian black mushroom over there to give more flavor. Let's put it over here. It is real as a hot believe it. Wow look at this this is monstrous. And then you quickly use your hint. You take it out. It's very very dangerous. Put it right here. It is Malvo. When this is done you put it over here you see the wonderful thing about this is they are. As I always tell my mother they are more tool fish stick instead of fish stick. From now on you stick the fish in all of your marvelous salmon were black bean sauce in for you. Thank you. T. Thank you show you some
of the foods which we're been keeping under wraps. This is a marvelous rebel group here look at this. Here we have the glutinous rice in banana. And here we have miso banana. We have the venom of these Pol Pot tame. And here we have Hawaiian style. And here we have coconut flavor Rice in cocoa nut leaves. And here we have fish in tea leaves YOU BIG them you can steam them. And here is a famous Chinese Joan. Like the Chinese tamale in bamboo leaves inside it's Groot in this right. And this is glutinous rice with a banana. They're all foods on the Rep That's why I said it's a rare group. The next thing I want to show you is some already food which the first I want to show you is something I like it very much. This what I call
steam rise noodle roll is a very very popular dim sum item so I'm going to show you how easy it is. Here we have a rock n roll in China we have the rice and roll. Here on all we have is some beef. Normally in this particular dish is very popular you can use beef you can use chicken ground chicken or you can also use shroom or barbecue Paul. But since we all have this I have nothing else but believe this all I can find from the fridge. So we're going to marinate the beef. OK. This is approximately a quarter of a pound. You can make about three or four ropes. OK. All I have to do is use about two tablespoon of dry sherry and approximately tool Teasmade of sesame seed oil and about Tool teaspoon of soy sauce. Exactly.
And also put a tiny bit of cornstarch OK and a white marvelous. Look at this a white. And then you use this to mix it up. Let it marinate. Let it marinate overnight if you want but you know half an hour or even 30 seconds is fine. It depends on where you are living in the fast lane or the slow lane. I don't know about you. I live in a slow lane. This morning I drove here and it took me two hours is only about 15 miles. OK let it mix him up. When you do it at home in your privacy or your kitchen you get done. And much better much faster. Let a city decide this is very easy to do. OK. And also you want you can also cut up a tiny bit of green onion. I always do everything faster.
Thank you OK. Now this onion you can put in later. You can put it in now. It makes no difference. It just gives some flavor and color in the meantime. I'm bringing some water to a boil so I can steam. OK let's make some more. Mix them all up. This looks marvelous. In fact you can stir fry does vary you can make beef bore out of these you can do all kinds of things. Ship it up and you can steamed. Now the next you want to do is something very important we're going to do the noodle the rice and a little better. Here I have approximate one and have cups of unsafe to kick flour. OK and then also I use about three tablespoon of cornstarch mix in with it three tables one of corn starch a tiny tiny bit of salt. We have to have salt this already inside their ideas fungo and also use about two cups of water mix it up.
Warder want to stir water stir. Stir it depends if you have no patience dump the whole thing in there. And then marvelous. OK it should be. Now you wonder why it is so thin. Don't worry you're not making paint cake this is not supposed to be pink and then you put the oil in here. OK. This way when you steam it it will come out. Otherwise you're going to have sticky rice in a little room. OK when this is nice and ready we are going to put this over here and we are going to steam does. Now this is how you do it OK. Look you put this right in here. OK very very scene. OK nice and seen if you have time you shoot makes it a little bit better.
And since I'm always in a rush or a little Lum here this is what you call steam rice noodle roll to LUMS. Oh this is exciting. I hope you find it exciting at home. And then we will sprinkle this around. Now in Chinese restaurant they do this half way. They steamed us almost done and then they put in. But I find this much easier to do. You just steam this sprinkle them around like this OK and you do about three or four of them at one time. Depends on how many tier of these bamboo steamer you have. When it's ready you take this out. And you see the image like this. OK now how long going to steam you steam in for approximately five or six minutes up to seven minutes depends where you see using gas or you use electric burner. OK of course a gas burner doesn't take too long to do it. OK now when it's done you already you to get 0. 1 is done you
take it out. Why out toward is done you can t the steam this so you can steam with for 600 people then this is hot so you use this crooked what they call bamboo. You see this is a lifter steam lift it actually works. I am in progress and you're probably right over here and then this is how you do it and you load it. You wrote it like this. You wrote it you wrote it. Tough to make a living and you load it roll it roll. Rule rule rule. This what you call Roy's role. Hurry up. It is done when it's done you can transfer this into does marvelous play and you serve with hoisin sauce and soy sauce and sprinkle
a tiny bit of sesame seed oil and this is how beautiful this dish can be located. This you can put a tiny bit of Hodgson's sauce right here a tiny bit of Hodgson's sauce right here kind of sauce and you sprinkle a tiny bit of all of it is. Look at this. So sauce and here you. See here. Thanks Wolf. Famous Food under wraps is the Chinese spring roll too. This is how we make them for millions of people. Cooking is a personal sport most of the time but sometimes they require a little work. Let's meet the team champions of the rule makers. We wear this camps to assure a high unsanitary standards. Next time one of our shower I'll be thinking about a rose this is a real poem was here. They can read 6000 It grows in an hour. Look at how fast
this hands are this are the fastest hands in the east. The West. And anywhere else in the world. I get tired just by watching this lady speeding fingers when they work they concentrate so much they don't even have time to smile. Oh sometimes they do take a break. It is amazing to see how every crew look alike absolutely identical and they are ripped so tightly that everything stays inside too. They don't even use the stapler. The coming green Ian for the in-group fillings is Pok all shroom will carry each shoot carrot garlic and or the secret seasonings. I think I'm getting a lot better at this. I just make three finally. I have great news for you. They tell me I can keep all the ones that I need to take it back to the studio just for you.
How the generous thank you now you really can carry this into five thousand pieces so each one of you can share our taste of dog show by the way. Anybody want to help. No Steve is yours anything I don't want. I give it to Steve. Now the next one I want to show you is a wonderful foot on the rap war won ton soup won tons of everybody in all this warm pot a won ton soup. Ok all I have for the feeling you got to get all the feeling ready or have his quarter pound of ground poke a quarter pound of shroom and a kind of mushroom and green onion. American it was sesame seed Oh white pepper and corn starch. Make them ahead of time. I have it right over here. OK so you don't have to do in a last minute to save time. You can heat up the broth. OK. Heat up the broth right here. Oh OK let's heat it up.
So this way we can cook the mushroom and the green onion and the ham and the bok choi and all those ahead of time while you fold the one ton. OK everybody see that. One two three four five six seven eight nine ten. Put them all together. Mushroom stack them all up. Put them all together and then I have some bok choy and some snow pea and some BBQ pork or ham. We put them all together in a pot to save time OK. Let's put them all over here. Lesson One two three one two three. And then this one two three. Put them all together. Bring it to a boil while you're doing the 110 So this way you can save time. Now when you do it as a home you should do the one ton wrap the one ton the night before you make sure you chop this up very very small. If this is too big and too bulky it will be Dora up.
Always keep one ton wrappers are similar repr spring roll repr cover with moist towers keep it from drying so you always keep it on the wrap. Now here it's nice and moist. You don't want to make it to dry it is dry it would crack. We'll show you here. I have all this ingredient. OK. Wrong pokes when mushroom Clinia is how you do it. Put it right in the middle. Put a tiny bit of if you want you can put a tiny bit of water right here. Seal it and then you make it into a triangle folded to the other side like this. Put a tiny bit of water right here. See this and then you fold it in. Like this look. One two three just one ton. We're going to have a lot of fun. OK. One over here we show you once again sealed this sealed this. Once again you see that. Put a timer water right over here.
One ton in Chinese means swallowing that Clowe. OK. When the wantons flowed into super dislike Clowe floating this feeling is very feeling so you can have a one dish meal for the diet conscious. OK this is good advice for the diet conscious. That's all you need. Put it right here and then you put a ton of water here and then all you see is the repr and then you're going to have a diet one tongue. This is one ton. This is court overturned. And then when this is burning you put the one ton all over there and bring it to a boil. Now in Chinese restaurant or at home a lot of time you can borrow this separately importing water and set it in water cold water so you do not have to do in the last minute when it's all nice and done. I want to show you how easy it is when it's nice and done you can take it out
from here which I have done because we've got so many people that they want to try including Steve. So we will. So Steve this is not for you when this is all nice and done. This is an odd foot and the wrap. Thank you to get through. Thank God you know a crow is wonderful. We just saw how they make it rose for millions of people right here you see this is the Filipino pier long pier is a fiddle Pinole version of the Chinese role in the Philippines. They were as China's version of the North Korea. Inside there in this little pier you have napa cabbage Rosette potato Tchiowa this is child a very popular vegetable in far and in Asia and also hate comma carrot and green and put them all together. Marinate them you put them in and different you go to the bank is
marvelous. This is not a dish which is my favorite. I'm going to show you how do the fresh very nice rice paper bundle here and I have some rice paper here paper feen paper OK. You can buy them in a store. All you have to do is you got to wet them so make sure they are Morson. OK after you wet them you can spray them or you can just brush them like this and cover up with power like this. So they will stay nice and moist in the meantime you put all the ingredients together. Now ripping food is international fare in Italian cuisine of ravioli Mexican cuisine or burritos baronies. This is the rice paper bundle. OK. All I have to do is some nice chicken some self-loathing. Do those put them all together cook them for about two minutes and you put some chops or lentils. OK and also put a tiny bit of one tablespoon to today was one fish sauce. This sauce normally come in a bottle like this.
They don't make in China or Vietnam or Thailand fish sauce and also some sesame oil and pepper pepper up a half a teaspoon or so and then also you can sprinkle some red bell pepper and green onion and I want to show you how easy it is. To cut up some. Thank you. Thank you now you mix them all up. If you want you can put a tiny tiny bit of water cress put it aside mix some more up with a tiny tiny bit of I already told you fish sauce OK. Pepper make some more and then you can wrap this up like this. Look at this this is food for. The soul in your body not food for thought. That's why you don't have to use a new look. Time to wrap it up. Now look at this. I want to show you got a rebel type OK a tie. A lot of stuff. Just
like a bull phase. You can put your own thing you can put a tiny tiny bit of water cress and you read it up very very tight like this and you serve with lettuce and a marvelous dipping sauce.
